Coffee is a Keeper 9/11/10

So, I've spent the last week and a half coffee-free because I'm trying to eliminate triggers for inflammation while I'm doing this exercise/PT stuff.  Coffee is very acidic and therefore can aggravate inflammation.  After almost 2 weeks without it I realize that I just don't function as well without the caffeine.  There are days when I literally can't get the engines going without a little help!

So, I researched low-acid coffee today and found that it's super simple to make your own.  I'm very happy about this.  All you do is put 1 lb of fresh ground coffee (any kind) in a bowl with 8 cups of water.  You cover the bowl and put it on a shelf in the pantry for 15 hours.  After that you drain the liquid with a coffee filter or cloth and then you have coffee concentrate.  Just store it in a jar in the fridge and you can add 2 tablespoons to water or milk for coffee.  Apparently, it still tastes like regular ole coffee, minus the acid.  I'll know for sure tomorrow morning!
